It’s interesting that whilst the Mediterranean is home to a large variety of aromatic plants, the finest examples rarely ever cross the narrow borders of their native lands. You could hunt for Mediterranean herbs at food markets, spice stores and delis around the world, but even your best finds won’t compare to the hand-picked oregano bunches that Greek women dry on their balconies during the summer months, or to the wild thyme shrubs that fill the islands’ air with their dainty fragrance each spring. Put simply, Greece is where some of the highest quality Mediterranean cooking herbs naturally prefer to grow. The varieties that grow in Greek soil can contain up to 30 times more essential oils (a parameter that defines their quality) than other typically available herbs sourced form elsewhere. Moreover, thanks to its immense diversity of microclimates, Greece is home to an infinite list of endemic plants. D&C are sourced from natural plantations and family-run farms where the produce is grown according to organic agricultural principles.

Thymus capitatus is the thyme variety that populates the rocky coastlines of Greece. If you've ever savoured the air on an island during springtime, you will remember the botanical scent of its blossoms. From this type of thyme, bees collect nectar for the most prized Greek honey.

Sourcing: When in blossom, Τhyme grows in a woody purple shrub. Our harvesters cut and sort the flower buds one by one , following an industrious process that allows you to awaken the aromas of the herb right when you need it. The most advanced tool to ever touch our thyme flowers, is a pair of scissors.
How to use: Use a mortar and pestle or crumble with your fingers. You will need a couple of blossoms per portion. Strong, floral, herbaceous and tingling, this thyme is best friends with lemon, garlic and olive oil, a combination capable of taking plain roasted potatoes to another level. Ideal for brining chicken, marinating lamb and pickling vegetables. You can also crumble a couple of thyme blossoms in your herbal infusions: they get along well with peppermint and they have digestive, antiseptic and antioxidant properties.
